noma’s food laboratory, located above the restaurant on the first floor of the 18th century warehouse, is where the chefs experiment and propose new dishes for the menu. In 2012 GXN, a division of 3XN, was hired to design the interior of this inspirational space. True to the restaurant’s philosophy, the lab was developed using Nordic materials, as well as raw and simple forms and to remain compliant with the building’s protected status, the space was designed to be constructed without any impact to the walls or floors. The following three lots are herb incubators designed by GXN for noma’s food lab. Featuring integrated lighting and wheels, these unique furniture forms attest to the freshness of ingredients used by noma’s team.
